I ordered some Chillies form John, they arrived today :D

So wasting no time I decided to try them for dinner tonight

Chicken wraps

Started with 2 of these little devils

Into the Kenwood chopper upper

I had a idea I was in trouble as soon as I tipped the ingredients into the pan when the back of my throat lit up and some serious coughing started :)

then into the pan with some onions and tomatoes , gentle heat to slowly cook the onions and warm up the chillies

Add the chicken breast and cook through thoroughly

In with some red pepper and mushrooms

keep on a low heat till everyone is cooked

Prep the wraps with some mayo

Strain out the fluid from the pan ( this help keep the wraps in one piece )

Nearly ready to plate up

Ready to wrap and eat

First couple of bites ! OK so I though these were going to be hot ?

Mmmm nice ,

Oh hold on ,

F-ck / s-it ,

bloody hell

Christ they ARE HOT ( Love it )

Run into kitchen crack open a Hobgoblin to put out the fire

MAN UP , in for round two

Win the war , empty plate

The flavor is differet and lingering

And as stated the heat does drop off quite quickly after 3 -4 mins

I enjoyed the challeng , however next time I think I will woos out and use 1 chilli

I am not in the spice club so hope you dont mind me posting some photos :^

Im curry mad. But limited. That is, I rely on Pataks Madras paste as of now, with a few additions. I cant beat it. I want 'Spice Club' to show me how..

On the upside I can make chapatis..is that a start?

Jack

Count me in.

Just saw this thread - if it's still going Pierre, I'd be interested too - salivating and it's only 920 in the morning ;-)

if you are interested, John did once post up curry spice mix recipe and some instructions for use - http://www.hifiwigwam.com/showthread.php?80395-Food-Anything-you-want-to-know-just-ask&p=1489570&viewfull=1#post1489570

I used to buy the mix from him, but have used this post to recreate a curry spice mix very successfully. The ingredients are easy to find, and of course you'll need to scale down the quantities accordingly, but preserve the ratios. Last time I made a batch I think I just made 10%. Of course doing this way will cost more as I believe John purchased the ingredients in bulk which results in cost savings.

I still have 4 in the fridge still waiting to be used.

Still, I used 2 others a month ago (fish thing (chemoulla?) and Taco mix) and they still taste amazing.

Anyone got any idea how to use the Paella, Sag Aloo and the Cajun spice?

Cheers, Lee

The saag aloo combined with the Naga produced burny poo last weekend. All who tasted it really enjoyed it and the Naga always produces a unique taste.

I feel the Paella will be next on the menu.

If you still have these spices hidden in a cupboard, USE THEM. They still taste amazing.

Time to revive this old thread...

I took delivery of some fantastic hand made Indian pickles from here a few days ago:
https://www.indianpickle.co.uk/Tried the lime pickle and the mango and chilli pickle, both delicious; lemon and ginger pickle and chilli pickle still to come! Very different and much more interesting flavour-wise from the standard offerings.

The mango & chilli didn't last very long...the lemon and ginger is delicious too.

Have a look at

https://bart.co.uk/product-category/curry

some interesting masala blends etc ……and I audit them regularly so they are ‘food safe’ …lol
I use the Patak's spice pastes fairly often - one jar is enough for 2 curries for up to four people, and the quality is great. Not to be confused with their curry sauces though, which aren't as interesting IMHO. Beware of their Madras paste though, tasty but definitely a "ring burner"

make your own masala - some great recipe websites out there. Make in small quantities as they dont stay fresh for long.

strangely i still have a copy of the original WAM masala mix that started this thread!!!
