Spice lovers,

I've managed to source some real Indian grown, harvested and dried Naga (ghost) chilli's.

They really are the real deal, not the cheap options that are grown in tanks in the UK, open the bag and you get that Naga Smokey spicy hit.

Typically they are £3-4 including postage per 10g but I've bought a lot and can do them at £2.50 posted.

Hi Paul,

I think it would be a case of removing all chilli from the original curry paste and using the Nagi's instead. I think it would be amazing the smokey flavour of the Nagi's would be great in my curry mix.

Thanks John, although I suspect it would be a little difficult, as it all was made into paste ;-)

In Caribbean cooking, they often put the chillis in whole and fish it out before serving so you get the flavour without the searing heat. I presume you could use these the same way?

Still, I follow the threads with great interest. There's ideas that come up that I've not heard of or just not considered.

Am I right in thinking that these, grown in a drier climate, wouldn't be as hot as the UK tank variety? And the whole chilli idea - pop it in, cook, take it out - is this workable for those of us who like hot, but not F!-me hot?

The heat from a Naga is flippin hot, but it doesn't hang around like some. I wouldn't normally eat anything hotter than say a Madras (vile shit, but that heat level). However I can eat a Naga on account of the amazing flavor and the safe knowledge that the heat goes as quickly as it arrives.
